Origin:
These olives come entirely from our single grove set just outside the historic town of Soriano nel Cimino. The grove is composed of 400 olive trees, grazed by the horses Rainbow and Simone, and a dozen beehives kept by a local beekeeper. The trees grow in silty clay soil, typical of the area, and sit at 1,840 feet above sea level on Monte Cimino. The grove features four olive varietals: Leccino, Frantoio, Moraiolo & Canino, lending to its unique flavor profile.
Our Process:
All of our extra virgin olive oil is made to maximize freshness and preserve quality. We hand-harvest every olive and cold-press within hours of harvest at a nearby cooperative mill. The oil is left unfiltered and frozen immediately to lock in its polyphenol-rich flavors, until it is bottled for farmers’ markets or customer orders.
